Honey Garlic Chicken

Ingredients
- 1 pound (about 2-3) boneless, skinless chicken breasts
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 1/8 teaspoon ground coriander (optional)
- 1/4 teaspoon ground ginger
- 1/2 teaspoon paprika
- 1 teaspoon black pepper
- 3 tablespoons olive oil (2 tablespoons for the chicken, 1 tablespoon for the sauce)
- 1 tablespoon minced garlic
- 3 tablespoons honey
- 2 tablespoons soy sauce

Directions
- In a bowl, coat the chicken breasts with the cornstarch, salt, ground coriander (optional), ground ginger, paprika, and black pepper.
- Add 2 tablespoons olive oil and rub it into the chicken until evenly coated.
- Place the seasoned chicken on an oven-safe tray.
- Bake at 400°F for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F.
- While the chicken bakes, heat 1 tablespoon olive oil in a pan over medium heat.
- Add the minced garlic and cook until soft and fragrant, about 1-2 minutes.
- Stir in the honey and soy sauce, then simmer for about 5 minutes until the sauce thickens.
- Once the chicken is done, coat it thoroughly in the honey garlic sauce.
- Serve hot, garnished with chopped green onions if desired.
