Honey Glazed Carrots

Ingredients
- 1/2 pound carrots peeled and cut into four halves
- 4 tbsp. olive oil
- 1/4 cup honey
- Salt and pepper
- Fresh thyme (optional)

Directions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- In a large mixing bowl, combine all the ingredients. Mix thoroughly until the carrots are evenly coated.
- Spread the coated carrots evenly on the prepared baking sheet in a single layer.
- Place the baking sheet in the preheated oven and bake the carrots until they are soft and tender, about 25–30 minutes. Be sure to flip the carrots halfway through the cooking time for even roasting.
